Layered, no-bake, and built for a crowd, this is the icebox dessert that disappears first at every potluck. Four distinct layers stack up in a 9×13 pan, and the only heat involved is melting the margarine for the crust.

It starts with a whole package of chocolate sandwich cookies crushed fine and pressed into a crumb base. Next comes a sweet, fluffy layer of cream cheese beaten with powdered sugar and whipped topping, then a thick layer of chocolate pudding, and finally a cloud of whipped topping crowned with reserved cookie crumbs.

Pull the cream cheese and whipped topping out ahead of time so they soften. Cold cream cheese fights the mixer and leaves lumps, while room-temperature ingredients beat into something smooth and spreadable.

Spread that first cream layer gently; the loose crust likes to lift and swirl into it if you rush. Then chill the whole thing overnight so the layers firm up and cut into tidy squares.

Kitchen Tips

  • A potato masher, or a zip-top bag and rolling pin, crushes the cookies fast; aim for fine, even crumbs.
  • Set aside that half cup of crumbs for the top before mixing the rest with the margarine.
  • Make it the night before; an overnight chill is what lets the layers set enough to slice cleanly.

Variations

  • Swap the chocolate pudding for vanilla, cheesecake, or peanut butter pudding.
  • Use mint or peanut butter sandwich cookies for the crust and topping.
  • Tuck sliced bananas or crushed peppermint between the layers.

Directions

Crush entire package of Oreos to fine consistancy (potato masher works fine for this).

Saving out ½ cup of Oreo crumbs for later use, mix remaining crumbs and melted margarine and press in bottom of 9 X 13 baking pan.

Tamp firmly with spoon or spatula.

Place in refrigerator for 5 minutes.

In large mixing bowl, combine confectioner’s sugar, cream cheese and one tub of cool whip.

Beat with electric mixer until thoroughly mixed.

Note: Items will mix much more easily if cream cheese and cool whip have been set out at room temperature ahead of time.

Retrieve pan from refrigerator, spread cream cheese/Cool Whip/sugar mixture evenly over Oreo crust.

Spread carefully, as crust will have tendancy to stick to mixture.

Return to refrigerator.

Prepare both boxes of chocolate pudding according to package directions.

Then quickly retrieve pan from refrigerator and spread over top of previous layer.

Return to refrigerator for 5 minutes.

Retrieve pan from refrigerator and spread remaining tub of Cool Whip evenly over pudding layer.

Sprinkle ½ cup of Oreo crumbs (set aside earlier) over top of Cool Whip layer.

Refrigerate until served.

For best results, make the night before.
