Mushroom Swiss chicken melts over wild rice with bell peppers, all cooked in one skillet. Swiss cheese melts over the chicken right in the pan. Ready in 40 minutes.

This one-skillet chicken dinner puts everything in a single pan: browned chicken breasts, wild rice, sliced mushrooms, bell peppers, and a slice of Swiss cheese melted right on top of each piece of chicken at the very end.

The chicken browns first, then the rice and seasoning packets simmer together in the same skillet, absorbing all the flavor from the browned bits on the bottom of the pan. Mushrooms go on top of the chicken during the last few minutes so they steam gently and stay tender instead of going rubbery.

The Swiss cheese step is simple but smart. Lay the slices over the chicken, cover the skillet, and take it off the heat. Five minutes of residual steam melts the cheese into a gooey blanket without any broiler needed.

Pro Tips

  • Brown the chicken well before adding the water and rice. That golden sear adds flavor to the entire dish as the rice cooks in those pan drippings.
  • Do not lift the lid during the 20-minute simmer. The rice needs consistent steam to cook evenly, and opening the lid lets it escape.

Directions

Spray large skillet with nonstick cooking spray.

Add chicken, cook over medium-high heat 5 to 7 minutes, or until light brown.

Add water, rice, and contents of seasoning packets.

Bring to a boil. Cover, reduce heat; simmer 20 minutes.

Stir in pepper; sprinkle mushrooms over chicken.

Continue cooking, covered, 5 to 8 minutes or until chicken juices run clear.

Place cheese over chicken, remove from heat.

Let stand covered 5 minutes or until cheese is melted.
