Unsweetened chocolate melted with butter, powdered sugar, hot milk, and shredded coconut get stirred together in a double boiler, then pressed into a greased pie plate and chilled until firm.
No flour, no crumbs, no graham cracker base. The coconut provides structure and chew while the chocolate cools into a setting agent. Once it firms in the fridge, you have a shell sturdy enough to hold a pint of softened ice cream without collapsing.
The fill-it-with-anything design is the whole charm. Vanilla keeps the focus on the chocolate shell, coffee leans into the bitter notes of unsweetened chocolate, and strawberry or raspberry makes it read almost like a Neapolitan pie. Pull the crust out about 15 minutes before serving so it softens just enough to slice cleanly.
Chef Tips
- Use a double boiler (or a heatproof bowl over simmering water). Direct heat scorches unsweetened chocolate fast.
- Sift the powdered sugar before adding. Even a small lump leaves a gritty bite once the crust sets.

Ingredients
Directions
Grease 8” pie plate.
In double boiler, melt chocolate and butter; stir to blend.
Combine milk and sugar; stir into chocolate mixture. Add coconut-mix well.
Press to bottom and sides of pie plate. Refrigerate, to make firm.
About 15 min. before serving, remove and let stand at room temperature.
To serve, fill with ice cream.
