10 minThis Indian-style lemonade is closer to a nimbu pani than a regular American lemonade. Fresh lemon and lime juice get sweetened with maple syrup instead of plain sugar, which gives the drink a deeper, almost caramel-like sweetness. Fresh grated ginger and an optional pinch of cayenne add warmth and a slow tingle at the back of your throat.
The maple syrup dissolves instantly in the water without any heating, which is why this recipe works as a no-cook, stir-and-serve drink. Regular sugar would need a simple syrup step. Just combine everything in a pitcher and it’s ready.
Serve it at room temperature or chilled. At room temperature the ginger and cayenne are more pronounced. Over ice, the citrus and maple come forward while the heat fades into the background.
Chef Tips
- Use fresh-squeezed citrus, not bottled. The difference in a drink this simple is immediately obvious.
- Grate the ginger on a microplane for the finest pulp. Larger ginger pieces float and create an uneven flavor from sip to sip.
- Start with half the cayenne and taste. A tiny pinch adds warmth. Too much and it overwhelms the citrus.
- Strain through a fine mesh sieve if you prefer a smooth drink without ginger bits.
Variations
- Replace maple syrup with honey for a floral sweetness, though you’ll need to dissolve it in warm water first.
- Add a few sprigs of fresh mint for an even more refreshing summer pitcher.
- Muddle a few slices of cucumber into the pitcher for a spa-style twist.
