60 minNo rolling pin, no blind baking, no fussing with dough. This “impossible” pie creates its own crust as it bakes. Everything goes into a blender: milk, butter, vanilla, eggs, sugar, and Bisquick. Thirty seconds on high and the batter is ready. The baking mix settles to the bottom during baking and forms a thin, tender crust while the top sets into a smooth custard.
The pie itself bakes plain, then gets loaded with fresh sliced bananas and a thick layer of sweetened whipped cream after it cools completely. That cool-first step matters. Warm custard melts the whipped cream instantly and turns the bananas brown faster.
Whip the heavy cream with powdered sugar in a chilled bowl until stiff peaks hold. Powdered sugar dissolves cleaner than granulated and won’t leave a gritty texture in the cream. Spread it thick over the banana layer so every slice gets a generous cap.
Pro Tips
- Grease the pie plate well. The self-forming crust sticks more than a traditional pastry crust.
- The pie is done when a knife inserted in the center comes out clean. The center will still look slightly wobbly but firms up as it cools.
- Slice the bananas right before topping the cooled pie. Early slicing means brown bananas by serving time.
- A squeeze of lemon juice over the banana slices slows browning if you need to hold it for an hour or two.
Variations
- Chocolate banana cream: Add 2 tablespoons of cocoa powder to the blender with the batter for a chocolate custard base under the bananas.
- Coconut cream topping: Fold shredded toasted coconut into the whipped cream for a tropical finish.
- Caramel drizzle: A thin stream of caramel sauce over the whipped cream turns this into a bananas Foster-inspired dessert.
