44 minThis is the foil-packet dinner that camping trips and lazy backyard cookouts were made for. Everything goes into one sealed pouch of foil, hits the grill, and comes out 20-some minutes later with zero dishes to scrub. The smoke off the grill and the smoked sausage do double duty on flavor.
The little splash of water sealed inside the packet is the secret. It turns to steam and cooks the potatoes and green beans through to tender while the sausage browns and the onion goes sweet and soft. A pat of butter and a drizzle of oil keep everything from drying out and help carry the seasoning.
Quarter the red potatoes small so they cook in the same window as the beans and sausage, and seal the foil tight, leaving just enough of an opening to pour in that water before you crimp it shut.

Preheat an outdoor grill for high heat.
On a large sheet of foil, place the green beans, red potatoes, onion, and sausage.
Season with salt and pepper, sprinkle with oil, and top with butter.
Tightly seal foil around the ingredients, leaving only a small opening.
Pour water into the opening, and seal.
Place foil packet on the prepared grill.
Cook 20 to 30 minutes, turning once, until sausage is browned and vegetables are tender.
