30 minGrilled or broiled tuna steaks get a quick, briny pan sauce of butter, garlic, fresh lemon juice, and capers. It’s one of those weeknight dinners that looks and tastes like you fussed, but comes together in about 15 minutes of actual cooking.
The sauce is dead simple: sauteed onion and garlic soften in butter, then lemon juice and capers hit the pan for a fast sizzle. That’s it. The capers bring a salty, vinegary pop that cuts right through the richness of the butter, and the lemon ties everything together. Spoon it over the tuna while both are still hot so the fish absorbs some of that sauce.
Tuna steaks dry out fast, so watch the clock. Five minutes per side is a guideline, not a guarantee. Look for the flesh to turn opaque about two-thirds of the way through, then flip.
Chef Tips
- Pat tuna steaks completely dry before oiling them. Surface moisture causes sticking and prevents a good sear.
- For a medium-rare center (which many prefer), cut the cooking time to 3-4 minutes per side.
- Use fresh lemon juice, not bottled. The difference in brightness is dramatic in a sauce this simple.
- Let the butter foam and settle before adding the garlic so it doesn’t burn.
Variations
- Herb butter: Stir chopped fresh parsley or dill into the finished sauce for a greener, more aromatic finish.
- Wine version: Splash in a few tablespoons of dry white wine with the lemon juice for extra acidity and depth.
- Olive oil base: Swap the butter for extra-virgin olive oil for a lighter, dairy-free take.
Ingredients
Directions
Brush tuna steaks with oil and broil or grill them until cooked through, about 5 minutes on each side.
Meanwhile heat the butter in a frying pan and slowly sauté the garlic and onion until softened, about 5 minutes.
Stir in the lemon juice and capers and cook for 1 minute.
Spoon the sauce over the tuna and serve immediately.
