60 minFavorite turkey broccoli casserole is the retro post-Thanksgiving rescue dish, the kind that turned leftover holiday turkey into something the whole family actually fought over. Cooked broccoli florets and diced turkey get layered into a baking dish, then drowned in a luxurious from-scratch white sauce.
The twist is that the bechamel gets enriched with mayonnaise and a touch of lemon juice. The mayo adds tang and richness, while the lemon cuts the heaviness and brightens the whole casserole.
A layer of cheddar melts into the sauce as it bakes, and buttered breadcrumbs on top crisp into a golden crust that contrasts the creamy filling underneath. Old-school comfort food that earned the “favorite” in its name.
Kitchen Tips
- Drain the broccoli well after cooking. Wet broccoli waters down the sauce.
- Whisk the milk into the roux slowly and steadily to keep the sauce smooth. Lumps mean rushed pouring.
- Pat the diced turkey or chicken dry before layering. Helps the sauce cling and not slide off.
- Cover with foil for the first 20 minutes if your breadcrumbs are browning too fast, then uncover to crisp.
Variations
- Stir in ½ cup sauteed mushrooms or ¼ cup grated Parmesan for an even richer casserole.
- Use Gruyere or sharp white cheddar instead for a more sophisticated flavor.
- Swap broccoli for cauliflower, asparagus, or a mix for variety.
