Look, we’re not going to pretend this is fancy. It’s Spam. But hear us out.

Sliced Spam and Swiss cheese get sandwiched between white bread, dipped in a beaten egg-and-milk mixture, then griddled in butter until the outside is golden-crisp and the cheese is melting out the sides like a Monte Cristo that took a detour through the 1950s.

The strawberry cream cheese on the side is the surprise that ties it all together: sweet, tangy, and oddly genius next to the salty, savory sandwich.

Is it gourmet? No. Is it satisfying in a way that’s hard to explain? Absolutely.

Kitchen Tips

  • Slice the Spam thin. Thick slices won’t heat through before the bread burns. You want it warm and slightly crispy at the edges.
  • Medium heat on the griddle. Too hot and the egg coating burns before the cheese melts. Patience gets you golden bread and gooey Swiss.
  • Press gently with a spatula while grilling. This helps the cheese make contact with the warm bread and melt faster.

Directions

Layer SPAM and cheese on 6 bread slices; top with remaining bread slices.

In shallow bowl, beat together eggs and milk. Dip both sides of sandwich in egg mixture.

In griddle or skillet, grill sandwiches in butter over medium heat until browned and cheese is melted, turning once.

Serve with strawberry cream cheese.
