Crockpot corned beef and cabbage braised low in beer with brown sugar and mustard, then the cabbage wedges go in at the end so they stay crisp-tender. The easy St. Patrick’s Day classic.

11 hrsThis is the no-stress route to corned beef and cabbage, and the slow cooker is the whole reason it works. The brisket braises low for hours in beer, mustard, and brown sugar until it slices like butter, while carrots and onions soak up flavor underneath.
The key move is holding the cabbage back. The wedges go in only for the last 45 minutes on high, after the beef comes out to rest, so they cook crisp-tender instead of dissolving into the gray, waterlogged mush that gives boiled dinners a bad name.
When it’s time to serve, slice the corned beef against the grain; that’s what keeps each piece tender rather than stringy. A spoonful of the braising juices over the cabbage ties it all together.
Pro Tips
- Rinse the corned beef before cooking to wash off excess brine, or the whole dish can come out too salty.
- Always slice across the grain. Cutting with the grain leaves the meat chewy and stringy.
- Add the cabbage only at the end so it stays bright and crisp-tender instead of soggy.
Variations
- Add halved baby potatoes with the carrots for a full one-pot dinner.
- Serve with grainy Dijon or a spicy mustard on the side, as the recipe suggests.

Directions
Combine carrots and onions in your slow cooker. Rinse corned beef under cold running water and pat dry with paper towels.
Place corned beef into crockpot and sprinkle with contents of seasoning mix.
Pour beer over brisket then spread mustard over brisket.
In small bowl mix brown sugar with water and pour over brisket. Cover crockpot and cook on LOW setting for 10 to 12 hours.
Remove corned beef from crockpot and cover with foil, then put into 200 degrees F oven to keep warm. Add cabbage wedges to vegetables and liquid in crockpot. Cover crockpot and cook on high for additional 45 minutes or until cabbage is crisp tender.
To serve, cut corned beef across grain into thin slices. Remove vegetables from slow cooker with slotted spoon and serve with corned beef.
Serve any juices over the cabbage.
Provide additional mustard on the side; I myself prefer spicy grainy dijon mustard.
