Flour tortillas get rolled around slices of ham, chunks of Monterey Jack, and strips of green chili, then lined up snug in a baking dish.
A from-scratch cheddar cheese sauce spiked with dry mustard gets poured over the top, and the whole thing bakes until it’s golden and bubbling.
It’s Baja California comfort food at its most straightforward and satisfying.

Roll each tortilla with a slice of ham, chunk of cheese, and a piece of green chili.
Place side by side, flap side of tortilla down in a 9×13 baking dish .
Cover with cheese sauce and bake 45 minutes at 350℉ (180℃).
Cheese sauce: Melt margarine, add flour and blend.
Add remianing ingredients, stir until smooth and thickened.
