Call them crepes, call them enchiladas, call them whatever you want as long as you make them tonight.

Flour tortillas get rolled around slices of ham, chunks of Monterey Jack, and strips of green chili, then lined up snug in a baking dish.

A from-scratch cheddar cheese sauce spiked with dry mustard gets poured over the top, and the whole thing bakes until it’s golden and bubbling.

It’s Baja California comfort food at its most straightforward and satisfying.

Kitchen Tips

  • Place the rolled tortillas seam-side down so they stay shut while baking
  • Make the cheese sauce smooth by adding the milk gradually and whisking constantly
  • Use corn tortillas instead of flour for a more traditional Mexican flavor
  • Swap the ham for shredded rotisserie chicken for a quick variation
