Six ingredients. Ten minutes of prep. One dish to wash. If you’re looking for a lighter casserole that still feels satisfying, this checks every box.

Low-fat cottage cheese and egg substitute form a fluffy, protein-packed base that bakes up almost like a crustless quiche.

Chunks of spinach dot the filling with pops of green while cubed low-fat cheese melts into gooey pockets throughout.

It comes out of the oven puffed and golden after an hour, firm enough to slice but still soft and creamy inside.

Kitchen Tips

  • Squeeze excess water from the spinach before adding it so the casserole sets properly
  • Let it cool for 5 minutes after baking so it holds together when you cut into it
  • Add a pinch of nutmeg or garlic powder if you want a little extra depth of flavor
