30 minThese old-school Cornflake Cookies are the kind your neighbor brought to every bake sale in the ‘80s, and they still hit the spot.
A whole egg gets creamed into butter and sugar, then mixed with flour, cream of tartar, and a mountain of crushed cornflakes. The batter is thick and chunky, studded with cereal crunch in every bite.
Drop spoonfuls onto an ungreased sheet and bake just 10 minutes at a lower temp for tender cookies with crispy cornflake bits throughout.
Chef Tips
- Crush cornflakes lightly (not to powder) so you get nuggets of crunch
- Space cookies 2 inches apart on the sheet for even baking
- Bake at 325°F for softer cookies; bump to 350°F for extra crispness
- Let cool completely before storing or they’ll stick together
