Fruit chutney spread on buttered toast, layered with sliced tomato, sauteed bacon and onion, then topped with cheese and grilled until bubbly and golden. The chutney is the twist here. That sweet-tangy spread underneath plays off the salty bacon and rich melted cheese in a way that plain toast never could.

Saute the bacon and onion together until the bacon turns golden and the onion softens. Drain them well so the toast stays crisp under the broiler instead of going soggy.

Directions

Melt butter, add next two ingredients, sauté until onion is tender and bacon is golden.

Drain well.

Arrange tomato over toast, top with bacon and onion and slice of cheese.

Place under hot grill until cheese has melted and becomes golden brown.

Serve hot.
