Chicken breasts get a quick sear, then simmer in cream of broccoli soup thinned with milk until cooked through and juicy. Stir a cup of cheddar into the sauce until it melts into something thick, glossy, and impossible to resist.

Pour that broccoli cheddar blanket right over the chicken, hit it with more shredded cheese on top, and serve it alongside rice or buttered egg noodles.

Kitchen Tips

  • Don’t skip browning the chicken. That golden sear adds flavor that the creamy sauce builds on. Just 2-3 minutes per side is enough.
  • Use sharp cheddar so the cheese flavor actually comes through in the sauce. Mild cheddar melts fine but tastes like nothing once it’s mixed in.
  • Add frozen broccoli florets to the sauce in the last 5 minutes of cooking for extra vegetable substance and a more complete one-pan meal.

Directions

Brown chicken breasts on both sides in a small amount of oil; drain off excess oil.

Combine soup and milk; pour over chicken. Bring to a boil; cover and cook over low heat 5 to 10 minutes or until chicken is cooked.

Remove chicken from pan; keep warm.

Add 1 cup of cheddar cheese to sauce; stir until melted.

Pour sauce over chicken. Sprinkle additional cheese over all.

Serve with hot cooked pasta or rice.
