Directions

Heat a large, heavy pot over medium-high heat with a tablespoon of vegetable oil.

Dice and sauté the onions, green chili pepper, celery stalks, garlic, and jalapeno pepper.

Add the beef, cook, stirring occasionally until well browned. Those browned bits called fond add flavor.

Add the remaining ingredients, including half of the beer. Drink the other half.

Add water just to barely cover the top of the mixture.

Cook over low simmering heat for about 3 hours, stirring often.
