Bulgur soaks in a mix of boiling water, apple juice, lemon juice, and lemon zest until it’s tender and plump with fruity flavor.

Then it gets tossed with diced red apple, juicy seedless grapes, crunchy celery, grated carrot, and a sprinkle of Italian parsley.

The result is a bright, crunchy grain salad that’s naturally fat-free and works as a light lunch, a picnic side, or a palate cleanser alongside richer dishes.

Kitchen Tips

  • Use a crisp, tart apple like Honeycrisp or Granny Smith. Soft, mealy apples will turn to mush in the salad.
  • The lemon juice does double duty: it flavors the bulgur and keeps the diced apple from browning.
  • Make this up to a day ahead. The bulgur stays firm and the flavors actually improve overnight in the fridge.

Directions

Place the bulgur, water, apple and lemon juices and lemon rind in a small bowl; cover and allow to soak until the liquid is absorbed, between 30 minutes and 1 hour.

Halve the celery stalk, then cut wider half in two lengthwise.

Cut the celery into thin slices on the diagonal.

Place the bulgur, celery, diced apple, grated carrot, grapes and parsley in a serving bowl and toss until combined.

Chill if desired before serving.
