Barley and cranberry dessert cooked in cranberry juice with raisins, cinnamon, lemon zest, and honey. A naturally sweet, whole grain treat served warm or cold with almost no fat.

This barley dessert is one of those recipes that sounds unusual but just works. Bits-o-barley (a quick-cooking cracked barley) gets simmered in cranberry juice with raisins, cinnamon, and lemon zest, then sweetened with honey. The barley absorbs all that tart, spiced juice and turns into a soft, porridge-like pudding.

The method is about as simple as cooking gets: bring everything to a boil, cover, remove from heat, and walk away. The residual heat does all the work while the barley soaks up every drop of liquid. No stirring, no watching the pot.

Serve it warm for a cozy, cereal-like dessert, or chill it for a firmer, more pudding-like texture. Both ways taste completely different despite being the same dish.

Kitchen Tips

  • Don’t lift the lid during the absorption stage. Every peek lets steam escape and extends the cooking time.
  • If you can’t find bits-o-barley, use quick-cooking barley as a substitute. Regular pearl barley needs much more liquid and time.
  • The honey goes in after the barley has absorbed the juice. Stirring it in while hot helps it incorporate evenly.
  • This keeps well in the fridge for 2 to 3 days and actually tastes better the next morning.

Variations

  • Apple cider version: Swap cranberry juice for apple cider and add a pinch of nutmeg for a fall-flavored twist.
  • Nut topping: Sprinkle chopped walnuts or pecans on top when serving for added crunch.

Directions

Bring first six ingredients to a boil, then cover, remove from heat and let stand until all the juice is absorbed.

Add honey, blend well.
