Forget vanilla wafers. This version layers crushed Oreo cookies and sliced bananas with a rich, from-scratch custard made from a dozen egg yolks, milk, sugar, and vanilla. Whole Oreos line the sides of the dish for a dramatic presentation.
The meringue on top, whipped from the dozen remaining egg whites, gets browned in a hot oven until golden and billowy. It’s a full production, but the kind that makes people put down their phones and pay attention to dessert.
Pro Tips
- Stir the custard constantly in the double boiler. It thickens gradually and scorches quickly if ignored
- Layer while the custard is still warm so it soaks into the crushed cookies and softens them
- Spread the meringue all the way to the edges of the dish to seal it, or it will shrink and weep
- This is a big-batch recipe built for a crowd. Use a 2 to 3 quart baking dish and plan accordingly
