60 minNo butter. No oil. No egg yolks. And these bars still come out moist, chewy, and genuinely satisfying.
Mashed banana and skim milk provide all the moisture, while quick oats and cinnamon give them that warm, oatmeal-cookie flavor. Raisins add pops of sweetness throughout.
Bake them in a 9×13 pan and cut into 24 squares. They work just as well grabbed on the way out the door in the morning as they do tucked into a lunchbox or served warm with a cup of tea.
Kitchen Tips
- Don’t overmix the batter. Stir just until the dry and wet ingredients come together for the best texture
- The bars are done when they spring back when touched in the center and start pulling away from the pan sides
- Serve warm for a softer, cake-like bar, or let them cool completely for a firmer, more portable snack
- Swap raisins for dried cranberries or mini chocolate chips if you want a different twist
Ingredients
Directions
In large bowl, stir together flour, oats, sugar, baking powder, cinnamon, soda, and raisins.
Add bananas, milk, egg whites, and vanilla; beat until lightly mixed.
Spread batter in a nonstick (or lightly oiled regular) 9×13” pan.
Bake in a 350’F. oven until cake is golden brown, just begins to pull from pan sides, and springs back when lightly touched in center, 35 to 40 minutes.
Serve warm or cool, cut into about 2” squares.
