Microwave baked sweet potatoes is the fastest healthy side dish in your kitchen, ready in minutes instead of the full hour an oven bake demands. The technique is unfussy: scrub the skins, pierce all over with a fork to vent steam, and arrange in a circle on paper toweling with space between each one.

The arrangement matters more than people expect. Microwaves cook from the outside edges of the cavity inward, so a single potato placed in the center of a circle of others will end up undercooked while the outer ring is done. Always arrange in a ring with empty space in the middle.

Piercing the skin with fork tines is non-negotiable. Sweet potatoes hold significant moisture, and trapped steam in an unpierced potato will literally explode the spud against the inside of your microwave. Six to eight quick stabs around the surface releases pressure safely.

Uniformly sized potatoes cook evenly. Mismatched sizes mean pulling smaller ones out early and finishing larger ones longer.
