Baked Snapper Gremolata

Red snapper fillets topped with a fresh gremolata of parsley, lemon zest, garlic, and thyme, baked right on a bed of crispy roasted potatoes. A complete one-pan dinner bursting with bright flavor.

60 minOne pan. That’s all you need for a dinner that looks and tastes like it came from a restaurant.
Thinly sliced potatoes get roasted in olive oil with thyme until they’re golden and crispy around the edges.
Then red snapper fillets are laid right on top, showered with a classic Italian gremolata of chopped parsley, finely grated lemon zest, and minced garlic, and sent back into a blazing hot oven for just 10 minutes.
The fish comes out flaky and fragrant, sitting on a built-in side dish of crusty, herb-scented potatoes.
Pro Tips
- Slice the potatoes thin, about a quarter inch, so they crisp up properly during that first roast.
- Crank the oven up before adding the fish. The high heat sears the outside quickly while keeping the inside moist.
- Gremolata is traditionally a finishing garnish, so don’t skimp on the lemon zest. That citrus punch is what makes the whole dish sing.
- Trout fillets work just as well as snapper if that’s what your fishmonger has.

Heat oven to 400℉ (200℃).
In large bowl, toss potatoes with olive oil, 1 teaspoon of the fresh thyme (½ teaspoon of the dried), a pinch of salt and a grinding of pepper.
Spread mixture in an even layer in 15×10 inch jelly roll pan.
Roast until potatoes are browned, about 35 minutes.
Remove pan from oven and increase temperature to 450.
In small bowl, blend parsley, lemon zest and remaining thyme.
Sprinkle lemon juice then herb mixture evenly over fish fillets and sprinkle lightly with salt and pepper.
Arrange fish on top of potatoes.
Return pan to oven and bake until fish is opaque in center, about 10 minutes.
For each individual serving, scoop up crusty potatoes topped with fish.
Garnish with fresh parsley sprigs if desired.
