Cornish game hens look fancy on the plate, but this recipe is dead simple. Rub them with butter, make a quick basting mixture of lemon juice, pressed garlic, and rosemary, then baste every 10 minutes for an hour. That constant basting is the whole technique, and it builds up layers of golden, garlicky, herbed skin.

Five ingredients. That’s it. The butter rub gives the skin a head start on browning, and the lemon-garlic-rosemary baste adds flavor with each pass. By the sixth baste, the skin is lacquered and deeply browned while the meat stays juicy underneath.

Directions

Rub hens with butter.

Combine other ingredients and use to baste hens.
