Apple Coffee Cake or Cinnamon Monkey Bread

Gluten-free monkey bread made in a bread machine, then shaped into cinnamon sugar balls. Rice flour and xanthan gum create a tender pull-apart loaf studded with nuts and raisins.

1 hrsThis recipe takes the bread machine route to gluten-free dough using rice flour, a gluten-free mix, and xanthan gum for structure. Once the dough cycle finishes, you roll it into small balls and dip each one in melted butter, then cinnamon sugar mixed with chopped nuts and raisins.
Pile them into a greased tube or loaf pan, let rise for 30-40 minutes, then bake until golden.
The result pulls apart into individual rolls, each one coated in sweet cinnamon and studded with fruit and nuts.
Bread Machine Tips
- Use the dough cycle only, not the bake cycle
- Make balls just smaller than an egg for even baking
- Don’t skip the rise time after shaping
- Grease the pan well to prevent sticking

Upon completeion of dough cycle, divide dough into small balls (just smaller than an egg) and dip into ½ cup melted butter and then in the sugar mixture (1 Csugar, 1½ teaspoon cinnamon, 1 cup finely copped nuts ½ cup raisins or craisins).
Place in a greased tube or loaf pan, cover with a towel and let rise (draft free) for 30 to 40 mins.
Bake in pre-heated 375℉ (190℃). oven for 45 mins.
