This recipe takes the bread machine route to gluten-free dough using rice flour, a gluten-free mix, and xanthan gum for structure. Once the dough cycle finishes, you roll it into small balls and dip each one in melted butter, then cinnamon sugar mixed with chopped nuts and raisins.

Pile them into a greased tube or loaf pan, let rise for 30-40 minutes, then bake until golden.

The result pulls apart into individual rolls, each one coated in sweet cinnamon and studded with fruit and nuts.

Bread Machine Tips

  • Use the dough cycle only, not the bake cycle
  • Make balls just smaller than an egg for even baking
  • Don’t skip the rise time after shaping
  • Grease the pan well to prevent sticking
