After Dinner Mint Cookies

Chocolate cookies rolled in chopped walnuts with melted mint wafers pressed on top mid-bake: two-tone mint-chocolate treats perfect after dinner with coffee.

100 minMelt half the mint chocolate wafers, mix into butter, sugar, egg, and salt, then gradually work in flour.
Chill the dough at least an hour, roll into walnut-sized balls, coat in finely chopped walnuts, and flatten slightly.
Bake eight minutes at 350 degrees, press a mint wafer onto each cookie, then bake 3-5 minutes more until the wafer melts into a minty chocolate cap.
Serves twelve to sixteen with elegant after-dinner flair.
Kitchen Tips
- Chill dough at least 1 hour so balls hold shape and don’t spread flat during baking
- Roll in finely chopped walnuts before baking for crunchy coating
- Press mint wafer on after 8 minutes, then finish baking so it melts into topping

Directions
Melt 5 ounces of the Mint Wafers in a double boiler, stirring constantly or microwave on medium for about 3 minutes.
Set aside.
Cream butter with sugar, egg and salt.
Mix in melted chocolate.
Gradually add flour.
Chill dough at least 1 hour.
Shape dough into balls, using 1 level tablespoon for each cookie.
Roll balls into nuts.
Place on greased baking sheets.
Flatten slightly with the palm of hand.
Bake at 350℉ (180℃) F for only 8 minutes.
Remove from oven and place Mint Wafer on top of each cookie, pressing slightly.
Continue baking 3 to 5 minutes longer or until cookie is firm.
