Some of the best Italian cooking is the simplest, and this ziti with broccoli proves it.

Tender broccoli and al dente ziti get tossed together in a warm sauce of olive oil, butter, fresh garlic, and parsley. A generous shower of real Parmigiano-Reggiano ties it all together.

No cream. No fuss. Just honest ingredients doing what they do best.

The original recipe calls for serving alongside a loaf of crusty Italian bread and a bottle of Barolo, and honestly, who are we to argue?

Variations

  • Add protein: Toss in some Italian sausage or grilled chicken to make it a heartier meal.
  • Spice it up: A pinch of red pepper flakes in the garlic oil adds a nice little bite.
  • Swap the pasta: Orecchiette or penne rigate catch the broccoli bits and sauce just as well.

Pro Tips

  • Don’t overcook the broccoli. You want it tender but still bright green with a little bite.
  • Warm the garlic oil gently. Burned garlic turns bitter fast and there’s no coming back from that.
  • Grate the Parmigiano fresh. The pre-shredded stuff doesn’t melt the same way.

Directions

Cut stems off broccoli and wash thoroughly.

Chop parsley and garlic together.

Steam broccoli in a little water in a covered saucepan for about 25 minutes.

In another pot cook the ziti in boiling salted water for about 20 minutes.

Combine olive oil, butter, parsley, and garlic. Stir to get flavor of garlic.

Warm this sauce for 2 minutes, but do not cook or burn.

Drain broccoli and ziti as soon as cooked.

Place both in the hot pot the ziti was cooked in and pour the sauce mixture over both.

Sprinkle on the cheese and black pepper, stir, and serve immediately.

Have a loaf of good Italian Bread and a bottle of Barolo.

Instead of dessert, try a mixed rugola and dandelion salad with Italian Salad Dressing and a soft Brie and Bel Paese cheese.
