A simplified take on the Italian icon, this tiramisu swaps the traditional mascarpone for easier-to-find cream cheese and leans on two liqueurs (Kahlua for deep coffee bite, Advocaat for a custardy yellow note) to boost the layered flavor.

Soaking is everything. Drag each ladyfinger quickly through the strong coffee and coffee liqueur mix, do not soak them through. You want the biscuit to drink just enough to soften, not collapse into a paste. A two-second dip per side is the rule.

Folding is the other quiet technique that separates good tiramisu from great. Whip the egg yolks with sugar until pale and thickened, then gently fold into the softened cream cheese to keep the filling airy. Spring-form pan is the smart move here: easy release means clean slices at serving.

Three hours minimum in the fridge is the real minimum, overnight is better. This is when the biscuits melt into the filling and the cocoa dust on top sets into a velvety finish.

Directions

Soak Lady fingers in coffee and Tia Maria or Kahlua.

Mix egg yolks and sugar; Layer as follows in a spring form pan: 1 layer lady fingers ½ cream cheese mixture 1 layrer lady fingers ½ cream cheese mixture sprinkle with cocoa Refrigerate at least 3 hours.
