Skip the deep fryer. These thick-cut sweet potato wedges roast on a sheet pan and come out tender inside with crisp, caramelized edges. The seasoning is the hook: brown sugar for caramel sweetness, kosher salt for balance, and cayenne for a slow-building heat that plays off the potato’s natural sugar.

Order of operations matters here. Toss the wedges in olive oil first so the surface is coated, then sprinkle on the sugar-salt-cayenne mix so it clings evenly instead of clumping. Spread them in a single layer with space between each wedge. Crowd the pan and they steam soft instead of browning.

Flip them halfway through so both cut sides catch color. Keep an eye on the last few minutes, because the brown sugar caramelizes fast and can cross from golden to burnt. A final sprinkle of kosher salt while they are still hot makes the flavors pop. Serve with whatever dip you love.

  • Cut the wedges to the same thickness so they cook at the same rate.

peeled, if desired, each cut into 6 wedges

plus more for sprinkling once fries are baked

TEASPOON ML CAYENNE PEPPER

Directions

Preheat oven to 425℉ (220℃).

In a small bowl, combine the brown sugar, kosher salt and cayenne pepper; set aside.

Place potato wedges in a large bowl and drizzle with the oil. Toss to coat well.

Place wedges on sheet pan and sprinkle with the seasoning mixture.

Bake for 15 minutes; turn and continue to bake for an additional 5 to 10 minutes, until tender and wedges are nicly browned. Sprinkle with additional kosher salt, if desired, while the fries are hot.

Serve with condiment of your choice.
