This salad looks like it belongs on a white tablecloth, but it takes all of 20 minutes to put together.

Blanched snow peas and thinly sliced ripe pear fan out over cups of ruby-red radicchio, drizzled with a light yogurt dressing sweetened with a splash of pineapple juice.

Toasted walnuts and sliced green onions finish it off with crunch and a little bite.

The combination of crisp, sweet, bitter, and creamy makes every forkful interesting.

Kitchen Tips

  • Blanch the snow peas for just 15 seconds. Any longer and they lose their snap. Drain immediately.
  • Brush the pear slices with lime juice right after cutting to keep them from browning.
  • Choose a ripe but firm pear so the slices hold their shape on the plate instead of falling apart.
