Snow Pea & Pear Salad

Elegant snow pea and pear salad on radicchio leaves with toasted walnuts and a light pineapple-yogurt dressing. A fresh, low-calorie starter ready in 20 minutes.

20 minThis salad looks like it belongs on a white tablecloth, but it takes all of 20 minutes to put together.
Blanched snow peas and thinly sliced ripe pear fan out over cups of ruby-red radicchio, drizzled with a light yogurt dressing sweetened with a splash of pineapple juice.
Toasted walnuts and sliced green onions finish it off with crunch and a little bite.
The combination of crisp, sweet, bitter, and creamy makes every forkful interesting.
Kitchen Tips
- Blanch the snow peas for just 15 seconds. Any longer and they lose their snap. Drain immediately.
- Brush the pear slices with lime juice right after cutting to keep them from browning.
- Choose a ripe but firm pear so the slices hold their shape on the plate instead of falling apart.

Directions
Combine yogurt, pineapple juice and sugar in a bowl.
Stir well and set aside.
Cook snow peas in a small amount of boiling water 15 seconds.
Drain well.
Cut the pear in half lengthwise, core and cut lengthwise into thin slices.
Brush with lime juice.
Arrange snow peas and pears on each of 4 radicchio lined salad plates.
Drizzle each with 1½ teaspoon yogurt mixture.
Sprinkle with green onions and walnuts.
