30 minEight cups of spinach wilts down to a side dish for eight in about 10 minutes. Red bell pepper strips, garlic, and a pinch of red pepper flakes go into hot olive oil first, then the wet spinach goes straight in with the water still clinging to the leaves.
That residual water is intentional. It creates a quick burst of steam that helps the spinach wilt evenly without needing any added liquid, and prevents the garlic from burning as the heat comes up. At 35 calories a serving, this is one of the most versatile low-calorie sides in the rotation.
