Sauteed spinach and red peppers with garlic and red pepper flakes in olive oil. A low-calorie vegetable side dish ready in 10 minutes that works alongside almost any protein.

Eight cups of spinach wilts down to a side dish for eight in about 10 minutes. Red bell pepper strips, garlic, and a pinch of red pepper flakes go into hot olive oil first, then the wet spinach goes straight in with the water still clinging to the leaves.

That residual water is intentional. It creates a quick burst of steam that helps the spinach wilt evenly without needing any added liquid, and prevents the garlic from burning as the heat comes up. At 35 calories a serving, this is one of the most versatile low-calorie sides in the rotation.

Directions

In large skillet, heat oil. Add bell pepers, garlic, and pepper flakes.

Cook stirring frequently for 3 to 4 minutes.

Add spinach, with water still clinging to the leaves to the skillet.

Sprinkle with salt.

Increase heat to medium-high and cook, stirring occasionally, three minutes or until vegetables are tender.

Each half cup serving provides: ½ FA and 2V.
