Here’s a thrifty, old-fashioned dinner that turns a can of salmon into something genuinely comforting. Everything goes into one bowl, gets blended, baked in a loaf pan, and comes out as a tender, savory loaf, no fancy technique required.

What earns this one the supreme tag is its richness. Sour cream and cheddar keep the loaf moist and creamy where plain salmon loaves can be dry, while cracker crumbs and a beaten egg bind it all together so it holds its shape and slices neatly. A little horseradish and a squeeze of lemon cut through the richness, brightening the salmon and keeping it from tasting flat.

The technique that matters most is not overbaking. Salmon loaf can dry out if left too long, so pull it once it’s set and the top is lightly golden. The extra cracker crumbs sprinkled on top toast into a pleasant crunchy crust. Serve it warm with a squeeze of lemon, a dollop of sour cream, or a simple dill sauce, alongside steamed vegetables or a green salad. It’s the kind of humble, satisfying supper that pantry staples were made for.

Kitchen Tips

  • Don’t overbake. Salmon loaf dries out quickly, so pull it once it’s set and the top is golden.
  • Pick out any bones and skin from canned salmon first, or mash the soft bones in for extra calcium.
  • Drain the salmon well so the loaf isn’t watery and holds together when sliced.
  • Let it rest a few minutes before slicing so it firms up.

Variations

  • Stir in chopped dill, parsley, or green onion for fresh flavor.
  • Use crushed Ritz-style crackers, panko, or breadcrumbs for the binder.
  • Add a spoonful of Dijon or extra horseradish for more kick.
