Hand pies the easy way. Skipping pastry crust and pulling biscuit mix off the shelf is the shortcut that takes turnovers from hours of work to half-hour territory. Apple juice replaces water for dough hydration, adding subtle fruit sweetness while keeping the texture tender.

The roll-twice technique matters more than it seems. First roll the dough out, cut biscuit rounds, then roll each round again into a larger thin circle. That second roll thins the dough enough to fold and crimp without thick gummy edges, which is the most common failure mode for homemade hand pies.

Filling-wise, the recipe leaves it open. Jam is the easy default, but fruit butters, honey-and-nut mixes, or cinnamon-sugar all work. Keep the spoon-in measure modest (no more than two and a half teaspoons per pie) or filling will leak through the seam during baking.

These can be baked or fried, hence the name. Baking gives a crisp exterior and lighter texture; frying delivers a golden flaky shell closer to pastry-shop turnovers.

Kitchen Tips

  • Press the edges with a fork dipped in flour for a tight crimp that holds through baking.
  • Pierce the top of each pie once with a knife tip to vent steam and prevent bursts.
  • Brush with oil before baking for color, or with melted butter for richer browning.
  • Fry at 360°F (180°C) for 2 to 3 minutes per side if going the fried route.

Variations

  • Fill with thick apple butter, cinnamon, and chopped pecans for autumn vibes.
  • Use chocolate-hazelnut spread with sliced bananas for a dessert version.
  • Stir half a tablespoon of sugar into the dough mix and dust hot pies with cinnamon-sugar for sweet hand pies.

fruit butters, honey and nuts, cinnamon, nutmeg, etc., to taste *

Directions

Stir oil into dry mix with fork until mixture is uniform in color and texture.

Stir in juice. Let dough set 2 minutes.

Knead dough 12 to 15 times.

Roll dough out to ¼ inch thickness.

Cut with biscuit cutter.

Roll biscuits out into larger, thin circles of dough.

Spoon 1½ to 2½ teaspoons of jam into the center of each circle, fold circle in half.

Press edges together. Place pies on lightly oiled cookie sheet.

Brush tops lightly with oil. Bake at 375℉ (190℃). for 10 to 12 minutes or until done.
