No-bake cereal bars with corn flakes, peanut butter chips, and brown sugar, topped with melted chocolate and peanut butter. Crunchy, chewy, and ready without turning on the oven.

These no-bake cereal bars are built on a sticky, buttery base of brown sugar, corn syrup, and peanut butter chips poured over crunchy corn flakes. The melted chocolate and peanut butter chip topping sets up firm in the fridge, giving you a candy-bar-like layer on top of the crispy base.

The whole thing comes together on the stovetop in about 15 minutes, then just needs time in the fridge to firm up. No oven, no fuss.

Press the cereal mixture firmly and evenly into the pan. Loose spots crumble when you cut the bars, and dense spots are too chewy. An offset spatula or the flat bottom of a measuring cup works well for getting an even layer.

Pro Tips

  • Bring the butter mixture to a full boil before removing from heat. The sugar needs to dissolve completely or the bars will have a gritty texture.
  • Work fast once you add the corn flakes. The sugar mixture starts setting as it cools. If it stiffens before you press it into the pan, the bars won’t hold together.
  • Melt the topping over hot water, not direct heat. A double boiler (or a bowl over simmering water) prevents the chocolate from seizing or burning.
  • Chill until the topping is fully set before cutting. Cutting too early smears the chocolate layer and makes a mess.

Variations

  • Rice crispy version: Swap corn flakes for puffed rice cereal for a lighter, crispier texture.
  • Butterscotch drizzle: Melt butterscotch chips alongside the chocolate for a swirled topping with caramel flavor.

Directions

Bring butter, brown sugar and corn syrup to a boil over medium heat; remove.

Stir in 1 cup of the peanut butter chips; mix well.

Stir in corn flakes cereal.

Press into greased 13 x 9 inch (3½ litre) pan.

Melt remaining peanut butter chips and chocolate chips over hot water.

Spread evenly over bars.

Chill to set chocolate.

Cut into bars.
