Four ingredients and zero baking make these butterscotch cookies one of the fastest treats you can put together. Melted butterscotch morsels and peanut butter get poured over corn flakes and whole peanuts, then dropped by the spoonful and chilled until firm.

The butterscotch-peanut butter combination creates a coating that’s sweet, salty, and rich all at once. As it cools, it hardens into a candy-like shell around the crunchy corn flakes and peanuts.

Melt the butterscotch chips over low heat and stir constantly. Butterscotch scorches faster than chocolate, and once it burns there’s no saving it.

Kitchen Tips

  • Keep the heat low when melting. Butterscotch chips seize and turn grainy if overheated
  • Pour the melted mixture over the corn flakes and peanuts quickly while it’s still fluid. It thickens fast
  • Coat everything evenly before dropping. Uncoated corn flakes will crumble off the finished cookies
  • Refrigerate for at least an hour until completely firm. They soften at room temperature

Variations

  • Use chocolate chips or white chocolate chips instead of butterscotch for a different flavor
  • Swap corn flakes for chow mein noodles for the classic haystack cookie variation
  • Add mini marshmallows to the dry mix before coating for a chewier texture

Directions

Melt over low heat, 1 package butterstoch morsels and ¾ cup peanut butter.

In another bowl, mix together 4 cups corn flakes and 1 cup peanuts.

Pour melted mixture over the dry mixture.

Mix until covered evenly.

Drop by teaspoon onto cookie sheet lined with wax paper.

Refrigerate until firm.
