Microwave cod gets a bad rap, but this lemon butter version delivers flaky, moist fish in under 15 minutes with almost no cleanup. The covered casserole traps steam, which gently poaches the fillets in melted butter and lemon juice while the lemon pepper and paprika build a light, bright seasoning layer on top.

The key to great microwave fish is not overcooking it. Check at the 10-minute mark. The fillets should flake easily with a fork and look opaque all the way through. If the thickest part still looks translucent, give it another minute. That 2-minute standing time after cooking finishes the job with carryover heat, so pull it out a touch before it looks fully done.

Dot the butter in small pieces across the top rather than one big lump. This gives you even melting and coats each fillet instead of pooling in one spot.

Directions

Arrange fillets in shallow 1½-quart oval microwave safe casserole or glass pie plate.

Dot with butter.

Sprinkle with remaining ingredients.

Cover with plastic wrap.

Use Cook cycle and cook 10 to 12 minutes or until fish flakes easily and is opaque. Let stand 2 minutes before serving.
