When the temperature drops, this is the drink you want wrapped in both hands. Apple cider simmered with whole spices, sweetened with brown sugar, spiked with rum, and finished with a pat of butter melting on top. The aroma alone will bring people into the kitchen.

The spice bag is what makes this work cleanly. Whole cinnamon, allspice berries, cloves, and strips of lemon peel tied in cheesecloth steep in the simmering cider like a giant tea bag. Fifteen minutes is all they need. Whole spices give a rounder, more complex flavor than ground, and the bag means no gritty bits in your mug.

Rum goes in after the simmer, not during. Adding it off-heat preserves the alcohol and keeps the rum’s flavor bright and forward rather than cooked down and flat. That pat of butter floating on top melts into a thin, glossy layer that gives each sip a velvety richness and takes the edge off the spice heat.

  • Use real apple cider, not apple juice. Cider is unfiltered and has a deeper, more complex apple flavor.

Directions

Combine apple cider or apple juice and brown sugar in a large saucepan.

For spice bag, tie cinnamon, allspice, cloves, and lemon peel in a 7 inch square of 100 percent cotton cheesecloth.

Add spice bag to cider mixture.

Bring cider mixture to boiling. Reduce heat and simmer, covered, for 15 minutes.

Remove and discard spice bag.

Stir in rum.

Pour cider mixture into mugs. Float about ½ teaspoon butter or margarine on each.

Top each serving with one or two thin apple slices.
