95 minThis straightforward honey-baked ham is all about the glaze: brown sugar, honey, a whisper of cinnamon, and tangy Dijon mustard.
Score the fat in a diamond pattern, stud with cloves if you’re feeling fancy, then brush on that sticky-sweet coating.
The apple juice in the roasting pan keeps everything moist while creating pan drippings you’ll want to spoon over every slice.
Baste every 30 minutes and you’ll have a glossy, caramelized ham that looks like it came from a magazine spread.
Chef Tips
- Leave some fat: Keep a thin layer of fat on the ham after removing the skin. It bastes the meat from the inside and crisps up beautifully.
- Score shallow: Cut just through the fat in a diamond pattern without hitting the meat underneath.
- Warm that glaze: Heat the honey-sugar mixture just until it’s pourable but still thick. Too thin and it’ll slide right off.
- Baste religiously: Every 30 minutes, spoon those pan juices over the ham. That’s how you build a mahogany crust.
Ingredients
Directions
Remove the layer of skin from ham, leaving a thin layer of fat to keep the meat juicy while baking.
Score the surface of the ham in a diamond pattern, without cutting into the meat.
Place a whole clove in the center of half the diamonds.
Place ham in roasting pan and brush top with mustard.
Combine sugar, honey and cinnamon; heat over medium temperature, about 2 minutes until mixture will pour, but not thin.
Spread over ham. Pour apple juice in bottom of roasting and bake at 325 degrees for 1½ hours. Baste every half hour using juices in the pan.

Thank u - this is a delicious & EZ recipe. I took suggestions fm others & I think it has to be covered. I basted about ev 15-20 then uncovered & turned on the broiler for the last 11 min to carmalize the glaze. Delicious!
