Two-Ingredient Halloween Truffles

These Halloween truffles are the last-minute October-31st lifesaver. Just two ingredients (chocolate coating and heavy cream), a few hours of chill time, and your choice of coatings transforms them into something that looks like it came from an artisan chocolate shop. Roll, dust, and top with mini pumpkin icing decorations for a dessert that genuinely wows at Halloween parties.

The two-ingredient ratio is classic ganache: equal weights of chocolate to cream, give or take. Heating the cream to a boil and pouring it over chopped chocolate melts the chocolate gently and evenly without risking a burnt bottom that happens when you try to melt chocolate directly over heat.

Letting the chocolate and hot cream sit undisturbed for 5 minutes before stirring is the professional move. The cream’s heat has time to fully melt the chocolate without aggressive stirring that can introduce air bubbles or split the ganache.

Directions

Place cream in a small saucepan over medium heat and bring to a boil, stirring constantly.

Once cream reaches a boil, remove from heat; add chopped coating and cover pan.

Let stand approximately 5 minutes, or until coating has melted.

Stir until smooth and creamy.

Refrigerate until firm. Roll into rounds.

Truffles may be rolled in a variety of coatings, such as cocoa, coconut or chopped nuts.

Place in Halloween Baking cups or pipe directly into candy cups.

To pipe, refrigerate truffle mixture just until it holds the shape when spooned.
