Green beans with mushrooms is a buttery, six-ingredient side dish. Fresh green beans simmered until tender, then tossed with butter-sauteed mushrooms for a humble holiday classic.

This is the side dish your grandmother probably made without ever thinking about it. Five ingredients (six if you count salt and sugar separately), one saucepan, and a small skillet, and you have a buttery vegetable plate that pairs with almost any roasted meat.

The pinch of sugar in the boiling water is the unsung hero. Just a teaspoon balances the natural minerality of the green beans, which is exactly what a hint of sugar does for tomatoes and corn. You don’t taste sweet, you taste rounder.

Thirty minutes might sound long by modern standards (we’ve all been trained to blanch green beans for two minutes flat), but this is old-school Southern-style cooking where the beans go soft and silky, not crisp-tender. If you prefer al dente, drop the cook time to 8 minutes.

Butter-sauteed mushrooms get folded in at the end so they keep their meaty texture. Even canned mushrooms benefit from a quick fry in butter to drive off the tinny note before they meet the beans.

Kitchen Tips

  • Salt the cooking water generously, like pasta water, so the beans season as they simmer
  • Swap canned for fresh button or cremini mushrooms if you have them, the flavor difference is significant
  • Brown the butter slightly before adding mushrooms for a nuttier, more complex finish
  • Drain the beans well so the dish doesn’t go watery on the platter

Variations

  • Add a splash of lemon juice and a sprinkle of toasted almonds for a green beans almondine twist
  • Stir in crispy bacon bits or pancetta for a salty, smoky upgrade
  • Finish with a clove of minced garlic sauteed with the mushrooms for a stronger savory base
