This is an excellent recipe for grilling flounder. The cajan seasoning is very good. I followed the recipe but I didn’t have worchestershire sauce. I would use this recipe again.

This grilled flounder recipe turns delicate fillets into flaky, perfectly seasoned fish with a hint of spice from cajun seasoning. The olive oil and lemon baste keeps the fish moist while it cooks, preventing it from sticking to the grill grates.

The flounder develops light grill marks and firms up as it cooks, turning opaque white with edges that crisp slightly. The cajun seasoning adds a warm, peppery kick without overwhelming the mild, sweet flavor of the fish.

This is one of the best ways to cook flounder because the high heat of the grill creates a light char while keeping the interior tender and flaky. The whole process takes about 20 minutes from start to finish.

Pro Tips

  • Oil the grill grates well: Flounder is delicate and sticks easily, so brush or spray the grates generously with oil before adding the fish.
  • Use a fish basket or perforated grill pan: This makes flipping much easier and prevents the fillets from breaking apart on the grates.
  • Follow the 10-minute rule: Grill for 10 minutes per inch of thickness, measuring the fish at its thickest point before cooking.
  • Don’t flip too early: Let the fish develop grill marks and naturally release from the grates (about 4-5 minutes) before attempting to turn.
  • Test for doneness with a fork: The fish is ready when it flakes easily and is no longer translucent in the center.

*** Variations

  • Lemon herb version: Skip the cajun seasoning and use fresh herbs like dill, parsley, and thyme with extra lemon zest.
  • Spicy cajun flounder: Add cayenne pepper or hot sauce to the basting mixture for more heat.
  • Grilled flounder in foil: Wrap the basted fillets in foil packets for easier grilling and no-stick cleanup, adding 2-3 minutes to cooking time.

Did you place fish directly in grill or did you use a pan of some sort

anonymous

Absolutely delicious!!! I cooked the fish on my griddle inside. Fast and easy.

Awesome I used citrus Fiesta salt free seasoning

Perfect. The citrus seasoning is a great alternative to Cajun on fish or any seafood in general.

Ok, so what is that green sauce that the flounder is sitting on in the picture?

sean

Minted pea pureé

I used this recipe but I coated the fish with light cajun seasoning and then poured on the liquid and put it in a pan on the grill. It came out FANTASTIC! Would recommend.

What's in cajun seasoning?

happyzhangbo

A blend of seasonings for Cajun cuisine that generally includes chiles and other spices such as celery, garlic, mustard, onion, and pepper. Hope this helps, and happy cooking :)

Try Old Bay Cajun seasoning. It's a perfect blend

Is the olive oil in the basting sauce or just used to coat the grill?

happyzhangbo

The olive oil is in the basting sauce. For sure you can coat the grill with additional olive oil as well. Happy Grilling :)

anonymous

Can I grill this in tin foil

happyzhangbo

Yes, you can certainly grill the fish in the foil, which will create a steaming environment and result in soft texture inside out instead of a crispy texture on the outside if grilling without foil. Hope this helps, and happy grilling :)

The flounder looks wonderful. What is it served over in the picture and could you please provide the recipe?

How or what can I use to keep the flounder from sticking to the grill? We oil the grill well first but it almost always falls apart. And we like it a little crispy.

Peggy

I use those copper mats to cook fish on grill. Doesn't stick

Jeff

The fish will basically saute in the oil and become a mushy mess. We just did that. It was the worst fish I have ever grilled. Absolutely awful.

Michael.

I use a wire grilling basket have one for veggies and one for fish. Worry great and you just flip them over when it’s time.

Dayna

This dish was delicious! We used a little extra Cajun seasoning as the baste was a little watery. Excellent dish, we’llmake again.

Hank

Great taste! I grilled in a basket to make it easy to turn.

Deb

I cooked this in an iron skillet. The pan was filled with water. I dumped it out but there was more. Is is this normal? I am new to cooking fish

William

Fish should be dried-off before oiled... perhaps, your fish was previously frozen and had retained residual moisture

user117212542094092178481@ggl

Good point, William. I’ve had the same issue with frozen fish, drying it off really helps with cooking and prevents all that extra water.
