Three fruits do most of the sweetening in this sugar-free freezer ice cream: fresh strawberries for floral aroma, canned pineapple for body, and orange juice for the bright citrus snap that keeps the dairy from feeling flat. The natural fruit sugars carry the load, so the added sugar (or substitute) plays support, not lead.

Light milk gives the base its smoothness without the heaviness of cream, which makes this version friendlier for diabetic-conscious eaters and lighter on the spoon. The pineapple juice brings natural acidity that helps prevent the texture from turning grainy in the freezer.

The actual mechanics depend on your machine. A traditional rock-salt-and-ice freezer usually takes 25 to 35 minutes of churning; a modern compressor model handles it faster. Either way, the mixture should look thickened and glossy before transferring to a container for hardening.

Strawberry season is the right window for this. The riper the berries, the less sweetener you’ll need.
