This homemade ginger beer couldn’t be simpler: five ingredients, one bottle, and about a day of patience while natural fermentation works its magic.

Fresh grated ginger brings spicy heat, lemon juice adds tang, and yeast creates the bubbles as it feeds on sugar in the warm sunlight.

You’ll know it’s ready when the plastic bottle feels rock-hard from carbonation buildup (usually 8-24 hours depending on temperature).

Chill it thoroughly before opening carefully over the sink, then strain into glasses for a refreshing, zippy beverage.

Pro Tips

  • Use a sturdy plastic soda bottle with a tight-fitting cap to handle pressure buildup
  • Place in a warm spot (sunny windowsill works perfectly) to speed fermentation
  • Check bottle firmness every few hours; refrigerate as soon as it’s hard to stop fermentation
  • Open very slowly over a sink to prevent fizzy overflow

Directions

Put the ginger, sugar, yeast and lemon juice in a 2 litre soda bottle, or any other sturdy 2 litre bottle with a tight fitting cap. This is easiest done with a funnel.

Add about a litre of the water and shake to dissolve all the sugar and yeast.

Now fill the bottle with water, but leave about a 4 finger space at the top to allow the drink to expand.

Place the bottle in a warm place, like a sunny window sill. When the bottle is completely hard you can put it in the fridge and serve it when it is cold. Open very carefully to prevent it from spraying everywhere.

Strain it through a sieve into seperate glasses.
