That move pulls the berry flavor into every crumb, rather than just having fruit scattered through plain bread. The loaf takes on a faint blue-purple tint, almost like a marbled effect.
Canned blueberries are specifically what the recipe calls for. Their soft texture survives kneading better than fresh berries, which crush completely under the bread machine paddle. If you want to use fresh, fold them in by hand during the second knead and finish in conventional loaf pans.
The recipe gives two finishing options: leave the dough in the machine for full automated baking, or pull it after the second knead, shape into two smaller loaves, and bake conventionally. The conventional bake gives better crust browning and a more controlled rise, which is worth the extra step for special occasions.
Room temperature ingredients matter more than people realize with bread-machine recipes. Cold liquids slow yeast activation and can lead to a dense crumb.
Bread Tips
- Push the yeast into a small well in the flour, away from the salt. Salt directly contacting yeast can kill it before kneading begins.
- If the dough looks too dry during knead, add water a tablespoon at a time. Bread machines mix harder than a stand mixer.
- Cool completely before slicing. Warm yeast bread tears under a knife and the crumb stays gummy.
- Wrap in foil and freeze whole loaves for up to three months. Thaw at room temperature.
Variations
- Stir half a teaspoon of lemon zest into the dry ingredients to brighten the blueberry flavor.
- Drizzle with a powdered sugar glaze for a sweeter dessert-style loaf.
- Use cranberries and orange zest for a holiday version.

Directions
In order listed, add all dry ingredients into pan.
Put well drained berries into a 2 cup measuring cup, add ¼ cup of retained juice and enough water to equal 1⅓ cups. Select white bread and push “Start".
NOTE:
All ingredients should be at room temperature. This can be mixed on manual of the bread machine.
After Second kneading, remove dough for machine, divide into to equal portions and place in small loaf pans. Cover and let rise to double, about 45 min to 1 hour.
Bake at 350℉ (180℃) F for 35 to 40 min.
