125 minThis is the doctored-can-of-beans technique that every American summer cookout has leaned on for decades. Two cans of pork and beans get a flavor upgrade with bacon drippings, sweet brown sugar, tangy ketchup, savory Worcestershire, and a kick of prepared mustard. The result tastes like homemade beans took all day.
The bacon does double duty. Its rendered fat sautés the onions and seasons the bean mixture from the inside, while the crumbled crispy pieces top the casserole for textural contrast against the soft beans. Skipping this step is the difference between memorable beans and forgettable ones.
The baking time matters. An hour and a half uncovered lets the sauce reduce and caramelize on top, building a deep, almost sticky finish on the surface beans. Microwave shortcuts work in a pinch but you’ll miss that caramelization. Serve hot alongside pulled pork, grilled chicken, hot dogs, or corn on the cob at any backyard BBQ.
Kitchen Tips
- Use real bacon, not bacon bits. The rendered drippings are essential to the flavor base.
- Reserve about 3 tablespoons of bacon drippings as written. More turns the sauce greasy, less leaves the onions dry.
- Choose pork and beans IN tomato sauce, not plain. Plain navy beans won’t have the sweet-savory base needed here.
- Let the beans stand a few minutes after baking. The sauce thickens slightly as it cools.
