Pizza dough gets rolled out, spread with cheddar cheese sauce, and loaded with stir-fried onions, peppers, carrots, zucchini, mushrooms, and broccoli. Fold it over, crimp the edges, prick the top, and bake until the crust turns golden and flaky.

It’s a single-serving calzone that comes together in 30 minutes, making it a solid option for a quick vegetarian lunch or solo dinner.

Kitchen Tips

  • Stir-fry the vegetables until just tender before filling. Raw veggies will release moisture inside the calzone and make the dough soggy
  • Leave a half-inch border when spreading the cheese sauce so it doesn’t leak out the edges during baking
  • Prick the top generously with a fork to let steam escape. This keeps the crust crisp instead of steamy

Directions

  1. Roll out pizza dough. Place on lightly greased 7 inch pizza pan.

Pat with hands to fit pan.

  1. Spread cheese sauce evenly to edge of dough, leaving ½ inch space from the rim.

  2. Place stir-fried vegetables along half of the dough. Fold dough in half.

Seal and crimp edges. Prick top with fork generously.

  1. Bake in preheated 375℉ (190℃) F convection oven 8 to 10 minutes or until crust is golden brown.

Serve.

Makes 1 small calzone.
