The ultimate make-ahead party trick hiding in your freezer.

Crab meat gets mixed with sharp Old English cheese, margarine, mayo, and a hit of garlic salt, then spread onto English muffin halves and cut into quarters. Pop them on a cookie sheet, freeze them solid, and toss them in a bag for whenever you need them.

When the doorbell rings, just pull them out and broil until bubbly and golden. No thawing, no fuss. Your guests will think you’ve been cooking all day.

Chef Tips

  • Let the cheese and margarine come to room temperature before mixing so everything blends smoothly.
  • Spread the crab mixture all the way to the edges of the muffin. Bare edges will burn under the broiler.
  • These keep in the freezer for up to 2 months, so make a double batch while you’re at it.

Directions

Mix together all except muffins.

Spread on muffins.

Cut muffins into quarters.

Freeze on cookie sheet.

Put in bag and store in freezer until needed.

Broil and serve.
