120 minThis no-bake frozen pie builds a crunchy chocolate crust from crisp rice cereal coated in melted chocolate chips and syrup, then fills it with scoops of your favorite ice cream and a tangy chocolate sauce made with sour cream.
The crust comes together in the microwave. Chocolate syrup and chips melt into a glossy sauce, and most of it gets stirred into the cereal. You press that mixture into a buttered pie plate and freeze it firm in about 15 minutes. That fast freeze is what gives the crust its snap.
The reserved chocolate sauce gets mixed with sour cream, which adds a subtle tang that keeps the sweetness from being one-note. It’s layered between and on top of the ice cream for a fudgy ribbon through every slice.
Kitchen Tips
- Press the crust in firmly with the back of a wet spoon. Loose spots crumble when you cut slices.
- Let the ice cream soften slightly before scooping into the crust. Rock-hard ice cream cracks the fragile cereal shell.
- Cover tightly with plastic wrap in the freezer. Uncovered ice cream picks up freezer odors and develops ice crystals.
- Pull the pie out 5 minutes before slicing. A brief rest makes it easier to cut clean wedges.
Variations
- Use peanut butter ice cream with the chocolate crust for a classic flavor combination.
- Swap crisp rice cereal for cocoa-flavored puffed rice for a double-chocolate crust.
- Top slices with whipped cream and mini chocolate chips before serving.
