Breasts get coated in seasoned breadcrumbs mixed with grated Parmesan, then browned quickly in olive oil until they’re golden and crunchy.
A spoonful of Italian-seasoned tomato sauce goes on top, followed by a blanket of shredded mozzarella that melts into a stretchy, bubbly layer.

On wax paper combine bread crumbs and ¼ cup grated.
Dip chicken breasts first in egg and then in bread crumb mixture until well coated.
Heat oil in a large, heat-resistant, non-metallic skillet over high.
Quickly brown coated chicken pieces on both sides.
In a small bowl combine tomato sauce, Italian seasoning and spoon tomato sauce over chicken.
