These Cereal Snack Meringues are one of those recipes that sounds a little quirky but delivers in a big way. Whipped egg whites get folded together with crunchy wheat cereal flakes and chocolate chips, then baked into golden, cloud-like bites.

With just four ingredients and about 45 minutes from start to finish, they come together faster than most cookies. The batch makes about 42 pieces, so there are plenty to share.

Kitchen Tips

  • Make sure your mixing bowl and beaters are completely grease-free before whipping the egg whites, or they will not stiffen properly.
  • Beat the egg whites until they hold stiff, glossy peaks before folding in the cereal. Under-beating leads to flat meringues.
  • Store in an airtight container at room temperature. Humidity is the enemy of meringues, so avoid making these on rainy days.

Variations

  • Swap the wheat cereal for rice cereal or cornflakes for a different crunch.
  • Add a pinch of cinnamon or a splash of vanilla extract to the egg whites for extra warmth.
  • Use white chocolate chips or butterscotch chips instead of semi-sweet chocolate.
