This vibrant carrot slaw breaks away from the mayonnaise-heavy norm with a bright, fruity vinaigrette sweetened by maple syrup and spiked with fresh citrus.

Juicy pineapple chunks and chewy raisins add pops of tropical sweetness that balance the earthiness of the carrots.

Make it ahead and let it chill so the flavors meld together into a light, healthy side dish for grilled chicken or fish.

Variations

  • Add crunch: Toss in toasted sunflower seeds or slivered almonds just before serving for extra texture.
  • Boost the herbs: Swap parsley for fresh mint or cilantro to change up the flavor profile.
  • Make it creamy: Whisk in a tablespoon of Greek yogurt to the dressing for a creamier coating without the heaviness of mayo.
